Eggplant Parmesan 1st time ever.

Well I went to one of our local food pantry's, they had Eggplants just harvested from a community garden.  
I have never had the pleasure,or  truthfully the desire either to eat this vegetable in any way or form.
I figured it was time to bite the bullet.


this is the pasta sauce I used, I added a teaspoon of sugar to each layer because the children like their sauce a little bit on the sweet side.
